Fresh Baked Artisan Bread

Ingredients:

3 cups lukewarm water
1 1/2 Tbs yeast (2 packets)
1 1/2 Tbs salt
6 1/2 cups flour

Can add
1 – 2 Tbs honey
1 Tbs Flax Seed
Sunflower seeds
Can use whole wheat flour, or mix of 1/2 white, 1/2 wheat

Add yeast and salt to water and activate yeast. Add flour and mix until just combined. (Do not knead). Let rise 3 – 4 hours. Can cook immediately or store in fridge.
When ready to cook, combine into 4 loaves (can cook all at once, or one loaf at a time, leaving remaining dough in fridge).
Flour hands. Roll dough into ball by bringing the dough from the “top” to the bottom of the loaf (the top dough will be harder and more dry). Flour top and score with knife. Let rise 30 – 40 minutes.
Bake at 450 for 30 minutes. Place dish with 1 c hot water in oven underneath bread.
