Sweet Potato Chili


1 Tbs canola oil
2 minced garlic cloves
1 cup diced small onion
1 1/4 lbs ground turkey
1 28-ounce can crushed tomatoes
1 15-ounce can pinto beans, drained/rinsed
1 medium sweet potato, diced
1 cup water
1 cup frozen corn, thawed
1 Tbs brown sugar
1 Tbs chili powder
1 Tbs ground cumin
1/2 tsp cinnamon
1/2 tsp salt
pepper to taste

Heat the oil. Add garlic and cook till golden. Add onion and cook until soft.
Add turkey and cook. Stir in tomatoes, beans, potato, water, corn, brown sugar, chili powder, cumin, cinnamon, and salt. Cover, bring to boil, Reduce heat and cook at low boil till potatoes are tender. 45 minutes. Season with salt and pepper.

Enjoy with Fresh Baked Bread.
