Oatmeal Pancakes (Oatcakes)

Ingredients:

3/4 cup quick-cooking oats
1/2 cup whole wheat flour
1 T flaxseed powder
1/2 teaspoon baking soda
1/2 teaspoon sugar
1 egg
1 cup buttermilk (we usually use soy milk)
3 tablespoons butter, melted

These have become a breakfast staple. The recipe makes enough for 2 people with no leftovers. Adapted from Taste of Home.
