2/3 feta cheese
a little lime juice
salt and pepper
Cook the corn using your usual method. If you have a grill, put it on the hot grill for a little bit to add some grill marks for character. Then smother on the cheese sause while it is still hot.
Our friend JR made this corn on the cob for us one night during one of our many dinner parties on Boston’s beacon hill. These dinner parties usually included the rooftop, live music, and a lot of laughter. While we are firm believers that corn on the cob tastes like heaven with nothing but a little butter, salt and pepper, this cheese sauce adds some character and can “spruce up” your corn, making you a hit at any party.
