Caribbean Zucchini Bread


2 c. white flour
1 c. whole wheat flour
1 1/2 t. baking powder
1 t. baking soda
1 t. salt
1 T cinnamon
1/2 t nutmeg
2 bananas mashed
1/2 c vegetable oil
1 c brown sugar
2 t vanilla extract
2 1/2 c grated zucchini
1 c chopped walnuts

Makes 2 loaves. Bake at 325 for 1 hour.

This recipe is from All-recipes. We discovered in when we were living at ECHO and were looking for creative ways to use the 50 lbs of zucchini Brian was growing. I think we’ve also added chocolate chips. This bread is so good it could definitely be a dessert.
